Method

Quesadilla

    Prepare cheese and tortilla

    Shred Tillamook cheddar if not pre-shredded. Place the 10-inch flour tortilla on a clean work surface or plate.

    Heat pan

    Heat a 10-inch nonstick or cast-iron skillet over medium-low heat for about 1–2 minutes. Brush or swirl the vegetable oil in the pan to lightly coat the surface to prevent sticking.

    Butter the tortilla (optional)

    Spread the unsalted butter thinly over one side of the tortilla (this will be the outside that touches the pan). Using butter gives a golden, slightly crispy exterior. If you prefer, omit butter and just use oil in the pan.

    Assemble and cook

    Place the buttered side of the tortilla down in the skillet. Sprinkle the shredded Tillamook cheddar evenly over the tortilla, leaving a 1/2-inch border. Fold the tortilla in half (making a semicircle) or place a second tortilla on top if you prefer a double-layer quesadilla. Cook 1.5–2 minutes until the bottom is golden and cheese begins to melt.

    Flip and finish

    Carefully flip the quesadilla using a spatula. Cook the other side 1–2 minutes more, pressing gently with the spatula so the cheese melts evenly. If cheese hasn't fully melted, lower heat to low and cover the pan for 30–60 seconds to trap heat and finish melting.

    Rest and cut

    Transfer the cooked quesadilla to a cutting board. Let rest 1 minute (so cheese sets slightly), then cut into 4 wedges for easy handling by kids.

Optional serving

    Serve each quesadilla wedge with small ramekins of sour cream and mild salsa and a few avocado slices on the side. For picky eaters, offer plain wedges first.
