    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté until the vegetables are tender, about 5-7 minutes.

    Add Garlic and Spices

    Add the minced garlic, thyme, and crushed red pepper flakes to the pot. Sauté for an additional 1-2 minutes until fragrant.

Cooking the Soup

    Combine Ingredients

    Add the fire roasted tomatoes, vegetable broth, and bay leaves to the pot. Bring the mixture to a boil.

    Simmer the Soup

    Reduce the heat to low and let the soup simmer for about 20 minutes. Stir occasionally.

Finishing Touches

    Blend the Soup

    Remove the bay leaves and use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender.

    Prepare the Cream Mixture

    In a separate bowl, mix the heavy cream, chopped basil, salt, and black pepper. Stir until well combined.

    Stir the cream mixture into the blended soup. Heat gently over low heat for an additional 5 minutes, stirring occasionally.
