Method
Cooking the Pasta
Boil the Pasta
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally.
Drain the Pasta
Once cooked, drain the pasta in a colander and set aside. Reserve some pasta water for later use.
Cooking the Vegetables
Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Then, add the bell pepper, zucchini, carrot, and broccoli florets. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.
Add Cherry Tomatoes
Add cherry tomatoes to the skillet and cook for an additional 2-3 minutes until they are softened.
Combining Ingredients
Mix Pasta and Vegetables
Add the drained pasta to the skillet with the sautéed vegetables. Toss everything together, adding reserved pasta water as needed to help the ingredients combine.
Season and Serve
Season with black pepper, and sprinkle the grated Parmesan cheese and fresh basil on top. Toss gently to combine and serve warm.
