Cooking the Pasta

Boil the Water

In a large pot, bring salted water to a boil.

Cook the Spaghetti

Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

Reserve Pasta Water

Before draining the pasta, reserve about 1 cup of the pasta water and set aside.

Drain the Pasta

Drain the spaghetti in a colander and return it to the pot.

Cook the Pancetta

In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat.

Combine Eggs and Cheese

In a bowl, whisk together the eggs and grated parmesan cheese until well combined. Add black pepper and mix.

Mix Everything Together

Add the drained spaghetti to the skillet with the pancetta. Quickly pour the egg and cheese mixture over the hot pasta, tossing everything together to create a creamy sauce. If the mixture is too thick, gradually add reserved pasta water until the desired consistency is reached.

Adjust Seasoning

Taste the pasta and add salt if needed, ensuring the dish has the right flavor.

Serve

Transfer the spaghetti carbonara to serving plates and garnish with chopped fresh parsley if desired. Serve immediately.
