For the Double-Battered Fries

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thick fries, about 1/4 inch wide. Place the cut fries in a bowl of cold water to soak for at least 30 minutes.

    Make the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water until the batter is smooth and well combined.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature for safety and accuracy.

    Fry the Potatoes

    Drain the soaked fries and pat them dry with a kitchen towel. Dip a small batch of fries into the batter, ensuring they are fully coated. Carefully lower the battered fries into the hot oil and fry until golden brown and crispy, about 4-5 minutes. Use a slotted spoon to remove them and drain on paper towels.

    Double Frying

    For extra crispiness, let the fries cool for a few minutes after the first fry. Then, fry them again in batches for an additional 2-3 minutes until they reach your desired crispiness. Remove from the oil and drain again.

    Add Parmesan

    While the fries are still hot, sprinkle the grated Parmesan cheese generously over them. Toss gently to ensure the fries are well coated.

For the Garlic Aioli

    Prepare the Garlic Aioli

    In a small bowl, combine the mayonnaise, minced garlic cloves (finely chopped or pressed), lemon juice, salt, and black pepper. Mix well until all ingredients are combined smoothly.

    Adjust Seasoning

    Taste the aioli and adjust the seasoning with more salt and pepper as needed. You can also add more lemon juice for extra tang.
