Method

Prepare the Rice

    Rinse the Rice

    Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice and 2.5 cups of water. Bring to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes or until the rice is tender and the water is absorbed.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once rice is cooked, remove from heat and let it sit covered for 10 minutes. Fluff the rice with a fork and gently fold in the vinegar mixture. Set aside to cool.

Marinate the Tuna

    Prepare the Marinade

    In a bowl, whisk together soy sauce, sesame oil, lime juice, orange juice, and sesame seeds.

    Marinate the Tuna

    Cut the ahi tuna into bite-sized cubes and add it to the marinade. Toss to coat. Cover and refrigerate for at least 15 minutes.

Prepare the Toppings

    Slice the Avocado

    Cut the avocado in half, remove the pit, and slice it into wedges.

    Prepare the Pineapple

    If using fresh pineapple, peel, core, and chop into small pieces. If using canned, drain and chop.

    Cook the Edamame

    If using frozen edamame, cook according to package instructions until tender. Drain and set aside.

    Shred the Carrots

    If not pre-shredded, use a grater or food processor to shred the carrots.

    Chop the Cilantro and Scallions

    Rinse and chop the cilantro and slice the scallions.

    Prepare the Nori

    Cut the nori sheets into strips or small squares for serving.

Make the Sauces

    Mix Spicy Sriracha Aioli

    In a small bowl, mix together mayonnaise and sriracha. Adjust the amount of sriracha to taste.

Assemble the Poke Bowl

    Layer the Ingredients

    In a bowl, start with a base of sushi rice, then add the marinated tuna, avocado, pineapple, edamame, shredded carrots, cilantro, and scallions on top.

    Drizzle with Sauces

    Drizzle sweet chili sauce and spicy sriracha aioli over the top of the poke bowl.

    Garnish

    Sprinkle sesame seeds and add nori strips for garnish.
