Prepare the Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually pour in the beer while whisking until you have a smooth batter.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use enough oil to submerge the fish pieces.

Fry the Fish
Dip each cod fillet into the batter, allowing excess to drip off. Carefully lower the battered fish into the hot oil and fry for about 5-7 minutes or until golden brown and cooked through. Remove and drain on paper towels.

In a separate pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Fries
Carefully add the fries to the hot oil in batches. Fry until they are golden brown and crispy, about 4-6 minutes. Remove and drain on paper towels. Season with salt while hot.

In a small bowl, combine the mayonnaise, chopped dill pickles, capers, lemon juice, and fresh dill. Mix well and season with salt and black pepper to taste.
