Main Ingredients

Method

Preparation

  1. 1

    Chop the Vegetables

Chop the onion into small pieces and mince the garlic cloves.

Cooking

  1. 2

    Sauté Onions and Garlic

In a large pot, add a splash of olive oil over medium heat. Add the chopped onions and sauté for about 5 minutes until translucent. Then add minced garlic and cook for another 1-2 minutes, until fragrant.

  2. 3

    Add Fire-Roasted Tomatoes

Pour in the fire-roasted tomatoes, including their juices, and stir to combine with the onion and garlic mixture.

  3. 4

    Stir in Broth and Seasonings

Add the vegetable broth, dried basil, oregano, salt, black pepper, and red pepper flakes. Stir well and bring the mixture to a simmer.

  4. 5

    Simmer the Soup

Let the bisque simmer on low heat for about 20 minutes, allowing the flavors to meld together.

  5. 6

    Blend the Soup

Using an immersion blender, carefully blend the soup until it's smooth and creamy. If you don’t have an immersion blender, transfer in batches to a countertop blender.

  6. 7

    Finish with Heavy Cream

Stir in the heavy cream and heat through on low for another 5 minutes. Adjust seasoning with salt and pepper to taste.

Serving

  1. 8

    Serve the Bisque

Ladle the soup into bowls and garnish with fresh basil leaves and a sprinkle of grated Parmesan cheese before serving.
