Method
To Prepare the Citrus Marinade
- 1
Combine Marinade Ingredients
In a medium bowl, whisk together the orange juice, lemon juice, lime juice, minced garlic, olive oil, salt, black pepper, and red pepper flakes until well combined.
- 2
Marinate the Shrimp
Add the jumbo shrimp to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours for maximum flavor.
To Prepare the Grilled Pineapple
- 3
Prepare the Pineapple
While the shrimp marinates, preheat your grill to medium-high heat. In a small bowl, mix the brown sugar and cinnamon.
- 4
Grill the Pineapple
Sprinkle the brown sugar mixture over the pineapple rings. Place the pineapple on the grill and cook for about 3-4 minutes on each side, or until grill marks appear and the pineapple is caramelized.
To Cook the Shrimp Skewers
- 5
Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning. Thread the marinated shrimp onto the skewers.
- 6
Grill the Shrimp
Place the shrimp skewers on the grill and cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque.
To Prepare the Jasmine Rice
- 7
Cook the Rice
Rinse jasmine rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the rice is tender and the water is absorbed. Fluff with a fork before serving.
