Chicken Marinade

Prepare the Marinade
In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and black pepper.

Marinate the Chicken
Add the chicken breasts to the marinade. Ensure each piece is well-coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for best flavor.
Basil Pesto

Blend the Pesto
In a food processor, combine the basil leaves, pine nuts, grated Parmesan cheese, minced garlic, olive oil, salt, and black pepper. Blend until smooth, scraping down the sides as necessary.

Adjust Seasoning
Taste the pesto and adjust seasoning with more salt or pepper if needed.
Compound Butter

Mix the Compound Butter
In a small bowl, combine the softened butter, chopped parsley, minced garlic, lemon zest, and salt. Mix until well combined.

Chill the Butter
Transfer the compound butter to a piece of plastic wrap, roll it into a log shape, and refrigerate until firm.
