Preparing the Bread
Slice the Baguette
Using a sharp knife, slice the baguette diagonally into 1/2-inch thick slices.
Toast the Bread
Preheat your oven to 400°F (200°C). Place the sliced baguette on a baking sheet and brush both sides lightly with olive oil. Toast in the oven for about 5-7 minutes or until golden brown and crispy.
Preparing the Topping
Dice the Tomatoes
Wash the tomatoes and remove the stems. Dice them into small pieces and place them in a mixing bowl.
Chop the Basil
Rinse the basil leaves. Stack them, roll them tightly, and slice into thin strips (chiffonade). Add the basil to the tomatoes.
Prepare the Cheese
If using fresh mozzarella, tear it into small pieces or dice it into small cubes. Add it to the bowl with tomatoes and basil.
Season the Mixture
Add salt, black pepper, and balsamic vinegar to the tomato mixture. Gently toss everything to combine.
Assembling the Bruschetta
Top the Bread
Once the bread is toasted, remove it from the oven and let it cool slightly. Spoon a generous amount of the tomato mixture onto each slice of toasted baguette.
Serve
Arrange the bruschetta on a serving platter and serve immediately while the bread is still warm.
