Method

Burger Patty Preparation

    Prepare the black beans

    In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

    Sauté the onion and garlic

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 5 minutes. Remove from heat and let cool slightly.

    Mix the patty ingredients

    Add the sautéed onion and garlic to the mashed black beans. Stir in the breadcrumbs, cumin, paprika, salt, black pepper, and egg (or flax egg). Mix until well combined.

    Form the patties

    Divide the mixture into 4 equal parts and form each part into a patty, about 1/2 inch thick.

    Cook the patties

    In the same skillet, add the remaining tablespoon of olive oil and heat over medium-high heat. Cook the patties for about 4-5 minutes on each side or until they are golden brown and heated through.

Assembly

    Prepare the toppings

    Slice the avocado and red onion, and have the aged white cheddar and chipotle aioli ready.

    Assemble the burger

    On the bottom half of each pretzel bun, place a handful of spring lettuce. Top with a black bean patty, sliced avocado, red onion, a slice of aged white cheddar, and a generous drizzle of chipotle aioli.

    Finish the burger

    Place the top half of the bun on the assembled burger and serve immediately.
