Chill glass

Place a coupe or martini glass in the freezer or fill it with ice water while you prepare the cocktail to chill (about 5 minutes).

Combine base ingredients

In a cocktail shaker, add 2 oz gin, 0.75 oz elderflower liqueur, 0.75 oz fresh lemon juice, 0.5 oz simple syrup and 2 dashes orange bitters. Fill the shaker about two-thirds full with ice.

Shake

Secure the shaker and shake vigorously for 10–15 seconds until the outside of the shaker is frosty and well chilled, which also lightly dilutes the drink.

Strain and top with bubbles

Discard ice or water from the chilled glass. Double-strain the shaken mixture into the chilled coupe (use a Hawthorne and a fine mesh strainer if available). Immediately top with 2 oz dry sparkling wine, pouring gently down the side to preserve bubbles.

Express the lemon twist: hold the twist over the drink and give it a quick squeeze to release oils, then run it around the rim and place it on the surface. Optionally, slap a mint sprig between your palms to release aroma and rest it on top. Serve immediately.
