    Prepare the Filling

    In a skillet, heat your choice of filling (chicken, beef, or vegetables) until fully cooked. If using vegetables, toss them with your favorite seasonings and grill until tender.

    Assemble the Chimis

    Lay a large flour tortilla flat and place 1/2 cup of the filling and 1/4 cup of shredded cheese in the center. Roll the tortilla tightly from one end to the other, folding in the sides as you go to enclose the filling.

    Crisp the Chimis

    In a large skillet, heat the cooking oil over medium heat. Place the rolled chimis seam-side down in the skillet and cook until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

    Prepare the Sauce

    While the chimis are cooking, prepare your special sauce (this could be a red or green salsa, or a creamy sauce of your choice).

    Serve

    Place the crisped chimis on a serving plate, smother with your special sauce, and garnish with sour cream, shredded lettuce, and chopped tomatoes. Serve with Spanish rice and beans or grilled vegetables on the side.
