This is the one everybody talks about! One bite and you’ll agree it’s the best. A giant tortilla stuffed with your choice of meat or seafood filling crisped until golden brown. Smothered in our special homemade sauce. Served with shredded lettuce, freshly chopped tomatoes, sour cream topping, Spanish rice, and your choice of beans.

In a skillet over medium heat, cook your choice of ground beef, shredded chicken, or shrimp until fully cooked. If using beef, drain excess fat.

Prepare the Filling

Take a large flour tortilla and spread a layer of refried beans in the center. Add a portion of the cooked meat, a sprinkle of shredded cheese, and a bit of homemade sauce.

Build the Chimi

Carefully fold the sides of the tortilla over the filling and then roll it from the bottom up to seal it tightly.

Fold and Seal

In a large skillet, heat oil over medium-high heat. Once hot, gently place the chimichangas seam-side down in the oil. Fry until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

Fry the Chimi

Place the crispy chimichangas on a plate, top with homemade sauce, and serve with shredded lettuce, chopped tomatoes, sour cream, Spanish rice, and your choice of beans.
