A large flour tortilla overstuffed with our seafood del mar mix, covered with seafood sauce and mozzarella cheese. Offered with Spanish rice and your choice of beans. Substitute Spanish rice and beans with our fresh, seasoned, and grilled vegetable mix for $1.49.

In a large skillet, heat olive oil over medium heat. Add minced garlic, diced onion, and bell pepper. Sauté until the vegetables are soft, about 5 minutes.

Prepare the seafood filling

Add the seafood mix to the skillet and cook until the seafood is opaque and cooked through, about 5-7 minutes. Stir in lime juice, chopped cilantro, salt, and pepper to taste.

Cook the seafood

Preheat the oven to 375°F (190°C). Lay a flour tortilla flat and spoon a generous amount of the seafood filling down the center. Roll the tortilla tightly and place it seam-side down in a greased baking dish. Repeat with the remaining tortillas.

Assemble the enchiladas

Pour the seafood sauce evenly over the rolled enchiladas. Sprinkle the shredded mozzarella cheese on top of the sauce.

Add sauce and cheese

Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Serve hot with Spanish rice and beans on the side or substitute with grilled vegetable mix for an additional charge.
