Cook the Beef
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.

Season the Beef
Add chili powder, cumin, garlic powder, and onion powder to the beef. Stir well to combine and cook for another 2-3 minutes.

Layer the Ingredients
In a baking dish, place two corn tortillas at the bottom. Spread half of the spiced beef on top, followed by half of the cheddar and Monterey Jack cheese. Add another layer of corn tortillas and repeat the process.

Add Sauce and Bake
Pour the red enchilada sauce over the top layer of tortillas and cheese. Bake in a preheated oven at 350°F (175°C) for about 20-25 minutes, or until the cheese is bubbly.

Prepare the Taco
While the Poco Loco is baking, prepare the crispy beef taco according to package instructions and fill it with shredded lettuce, diced tomatoes, and a dollop of sour cream.

Serve
Once the Poco Loco is done baking, remove it from the oven, cut into squares, and serve it alongside the crispy beef taco.
