Cook the Beef
In a large skillet over medium heat, heat olive oil. Add chopped onion and minced garlic, sauté until softened. Add ground beef, breaking it apart with a spatula. Season with chili powder, cumin, salt, and black pepper. Cook until the beef is browned and cooked through, about 7-10 minutes.

Prepare the Tortillas
While the beef is cooking, warm the corn tortillas in a separate skillet or microwave until pliable.

Layer the Ingredients
In a baking dish, lay two corn tortillas on the bottom. Spread half of the cooked beef mixture over the tortillas. Pour half of the homemade red sauce over the beef. Place another layer of tortillas on top, followed by the remaining beef and red sauce.

Bake
Preheat the oven to 350°F (175°C). Bake the layered tortillas for about 15-20 minutes, until heated through.

Garnish and Serve
Remove from the oven, and garnish with shredded lettuce, diced tomatoes, and a dollop of sour cream on top. Serve hot.
