Prepare the Flautas
In a skillet over medium heat, warm the corn tortillas until pliable. Fill each tortilla with shredded chicken and cheddar cheese, then roll tightly. Secure with a toothpick if necessary.

Crisp the Flautas
In a deep frying pan, heat olive oil over medium-high heat. Fry the flautas until golden and crispy, about 3-4 minutes on each side. Remove and drain on paper towels.

Cook the Spanish Rice
Prepare the Spanish rice according to package instructions while the flautas are frying.

Prepare the Beans
Heat the refried beans and black beans in a small saucepan over medium heat, stirring occasionally until warmed through.

On a large platter, arrange the crispy flautas alongside the Spanish rice, beans, diced tomatoes, and a dollop of sour cream. Drizzle the chimichurri sauce over the flautas.
