Prepare the Filling
In a large skillet, heat the olive oil over medium heat. Add your choice of cooked meat (chicken, beef, or pork) and season with salt and pepper. Stir well and cook until heated through, about 5 minutes.

Assemble the Burritos
Lay a tortilla flat on a clean surface. Place about 1/2 cup of the cooked meat in the center of the tortilla. Sprinkle with 1/4 cup of Monterey Jack cheese and 1/4 cup of Cheddar cheese. Add a spoonful of sour cream and a sprinkle of fresh cilantro.

Roll the Burrito
Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top. Repeat with the remaining tortillas and filling.

Bake the Burritos
Preheat your oven to 375°F (190°C). Place the rolled burritos seam-side down in a baking dish. Pour the red enchilada sauce evenly over the top of the burritos and sprinkle with any remaining cheese.

Bake
Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Serve
Remove from the oven and let cool for a few minutes before serving. Garnish with extra cilantro and serve with sour cream on the side.
