    Cook the Meat

    In a skillet, heat olive oil over medium heat. Add the ground beef or shredded chicken. Season with salt and black pepper. Cook until browned and fully cooked, about 6-8 minutes. Drain any excess fat and set aside.

    Prepare the Tortillas

    Warm the large flour tortillas in a dry skillet or microwave until soft and pliable.

    Assemble the Burritos

    Spread refried beans evenly over each tortilla. Add a portion of the cooked meat, cheddar cheese, Monterey Jack cheese, and a sprinkle of chopped cilantro on top.

    Roll the Burritos

    Fold in the sides of the tortilla and roll tightly from the bottom up to enclose the filling.

    Bake the Burritos

    Preheat your oven to 350°F (175°C). Place the rolled burritos seam-side down in a baking dish. Pour the red enchilada sauce over the top and sprinkle with any remaining cheese. Bake for 15-20 minutes until the cheese is melted and bubbly.

    Remove from the oven and let cool for a few minutes. Serve with sour cream and additional cilantro on the side.
