Marinade and Main Ingredients
Method
Preparation and Cooking
- 1
Marinate the Meat
In a bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, oregano, salt, and black pepper. Add the flank steak or chicken breast, ensuring it is well coated. Cover and marinate in the refrigerator for at least 1 hour or overnight for best results.
- 2
Grill the Meat
Preheat the grill to medium-high heat. Remove the meat from the marinade and discard the marinade. Grill the steak or chicken for about 6-8 minutes on each side for medium-rare (steak) or until fully cooked (chicken). Use a meat thermometer for best results (165°F for chicken).
- 3
Prepare Enchiladas
While the meat is grilling, prepare your choice of enchiladas (beef, chicken, or cheese) according to your preferred recipe or package instructions.
- 4
Serve
Once the meat is grilled, allow it to rest for a few minutes before slicing. Serve with the enchiladas, Spanish rice, pico de gallo, and warm flour tortillas on the side.
