Lightly crisped hand-rolled flour tortillas filled with seasoned shredded chicken, roasted red peppers, grilled corn with mild Cheddar and Monterey Jack cheese. Served with jalapeño jelly sauce for dipping.

Prepare the Filling
In a large bowl, combine the shredded chicken, roasted red peppers, grilled corn, mild Cheddar, and Monterey Jack cheese. Season with salt and pepper to taste. Mix well until all ingredients are evenly distributed.

Assemble the Flautas
Take a flour tortilla and add a few tablespoons of the filling mixture in a line down the center. Roll the tortilla tightly around the filling and place seam-side down on a baking sheet. Repeat with the remaining tortillas and filling.

Cook the Flautas
In a large skillet, heat the olive oil over medium heat. Once hot, carefully add the rolled flautas to the skillet, seam-side down. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on paper towels to drain excess oil.

Serve
Serve the flautas warm with jalapeño jelly sauce for dipping.
