Prepare the Fajita Ingredients
In a large bowl, combine sliced bell peppers, sliced onion, olive oil, and fajita seasoning. Toss until well coated.

Grill the Meat
Preheat the grill to medium-high heat. Grill the fajita steak or marinated chicken breast for about 5-7 minutes on each side or until fully cooked. Remove from grill and let rest before slicing.

Prepare the Enchiladas
In a baking dish, fill each flour tortilla with shredded cheese and roll them up. Place the filled tortillas seam-side down in the dish. Pour the creamy white queso over the top and sprinkle with any remaining cheese.

Bake the Enchiladas
Preheat the oven to 350°F (175°C). Bake the enchiladas for 15-20 minutes, or until the cheese is melted and bubbly.

Serve
Slice the grilled steak or chicken. Serve alongside the cheese enchiladas, and garnish with fresh cilantro and a dollop of sour cream.
