Prepare the Ingredients
Slice the steak or chicken into thin strips. Slice the poblano peppers and onion into thin strips as well.

Marinate the Meat
In a bowl, combine the meat with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Let marinate for at least 30 minutes.

Cook the Vegetables
In a large skillet, heat a tablespoon of olive oil over medium-high heat. Add the sliced onions and poblano peppers, cooking until softened and slightly charred. Remove from the skillet and set aside.

Cook the Meat
In the same skillet, add the marinated meat and cook until browned and cooked through, about 5-7 minutes.

Assemble the Burritos
Lay a tortilla flat and add a portion of the cooked meat, grilled vegetables, a generous scoop of red sauce, and a mix of cheddar and Monterey Jack cheese. Roll the tortilla tightly to form a burrito.

Melt the Cheese
Place the assembled burritos in a baking dish. Pour extra red sauce over the top and sprinkle additional cheese. Bake in a preheated oven at 350°F (175°C) for about 10-15 minutes, until the cheese is melted and bubbly.

Serve the fajita burritos hot with Spanish rice on the side and a dollop of sour cream on top.
