Prepare the Tamales
In a mixing bowl, combine corn masa flour, chicken broth, vegetable oil, and a pinch of salt. Mix until a dough forms. Spread a spoonful of the dough on a corn husk, add shredded chicken, and fold the husk. Repeat until all dough is used. Steam for about 1 hour.

Make the Enchiladas
Preheat your oven to 350°F (175°C). In a baking dish, spread some chili sauce on the bottom. Fill corn tortillas with shredded cheese, roll them up, and place them seam-side down in the dish. Pour more chili sauce on top and sprinkle with remaining cheese. Bake for 20 minutes.

Prepare the Tacos
In a skillet, cook ground beef over medium heat until browned. Drain excess fat. Add taco seasoning and a splash of water; cook until thickened. Serve in taco shells with diced onions, cilantro, and sour cream.

Arrange the enchiladas, tamales, and tacos on a serving platter. Garnish with fresh cilantro and serve with additional sour cream on the side.
