Preparation

    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent. Add the shredded meat and season with salt and pepper. Cook until heated through, then remove from heat.

    Assemble the Enchiladas

    Preheat the oven to 350°F (175°C). Take a corn tortilla, fill it with the meat mixture, and roll it up. Place two rolled enchiladas in a baking dish. Repeat with the remaining tortillas and filling.

    Add Cheese and Sauce

    Pour half of the enchilada sauce over the rolled enchiladas in the baking dish. Sprinkle the shredded Cheddar and Monterey Jack cheese on top. Pour the remaining sauce over the cheese.

    Bake

    Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

    Serve

    Remove from the oven, garnish with chopped cilantro, and serve hot.
