    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add the shredded beef or chicken and cook until heated through. Season with salt and pepper. Stir in the diced jalapeño and creamy fundido sauce. Mix well and remove from heat.

    Assemble the Chimis

    Warm the flour tortillas in a separate skillet or microwave. Place a generous amount of the beef or chicken mixture in the center of each tortilla. Roll them up tightly and place them seam-side down on a greased baking dish.

    Add Cheese and Bake

    Preheat your oven to 375°F (190°C). Top each chimi with a mix of shredded Monterey Jack and Cheddar cheese. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
