Prepare the Chicken
Season the chicken breasts with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken until it is no longer pink in the middle, about 6-7 minutes per side. Remove from heat and let it rest for a few minutes before slicing it into thin strips.

Assemble the Quesadilla
Lay one flour tortilla on a flat surface. Sprinkle 1/2 cup of shredded cheese on half of the tortilla, followed by a portion of the sliced chicken. Top with another 1/2 cup of cheese, then fold the tortilla in half to cover the filling.

Grill the Quesadilla
In the same skillet, add the remaining tablespoon of olive oil and heat over medium heat. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted.

Serve
Remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve with optional toppings such as sour cream, salsa, or guacamole.
