Chicken Fajita Strips
Preparation
1. Marinate the Chicken
In a bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper. Add the chicken breast, ensuring it is well-coated. Marinate for at least 30 minutes.
2. Prepare the Veggies
Slice the bell peppers and onion into thin strips.
3. Grill the Chicken
Preheat the grill over medium-high heat. Grill the marinated chicken for 5-7 minutes on each side, or until cooked through. Remove from grill and let rest for a few minutes before slicing into strips.
4. Sauté the Veggies
In a skillet over medium heat, add a splash of olive oil. Sauté the bell peppers and onion until they are tender, about 5-6 minutes.
5. Warm the Tortillas
Warm the flour tortillas on the grill for about 30 seconds on each side or in a microwave for 20 seconds.
6. Serve
Serve the grilled chicken strips with the sautéed veggies, Spanish rice, and warm tortillas.
