    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from skillet and drain on paper towels. Once cooled, crumble the bacon into small pieces.

    Prepare the Filling

    Chop the tomato into small cubes and combine it with the crumbled bacon, mild Cheddar cheese, and Monterey Jack cheese in a bowl. Season with salt and pepper to taste.

    Assemble the Quesadilla

    Spread half of the cheese mixture over one tortilla, leaving a small border around the edge. Place the second tortilla on top, pressing down gently.

    Cook the Quesadilla

    In the same skillet, melt the butter over medium heat. Carefully place the assembled quesadilla in the skillet and cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted.

    Serve

    Remove from the skillet, cut into wedges, and serve warm with salsa or sour cream if desired.
