Baja Taco (paradiso Specialty) Recipe

Flavorful taqueria-style tacos. Two soft flour tortillas filled with grilled fajita steak or chicken, pico de gallo, freshly chopped cilantro, a blend of Monterey and Cheddar cheese and bacon on a bed of onions. Served with a side of Spanish rice, fresh, seasoned and grilled vegetable mix, sour cream topping and a lime wedge. Lightly sprinkled with Cotija cheese.

    Prepare the Fajita Meat

    Grill the fajita steak or chicken until fully cooked. Slice into strips and set aside.

    Sauté the Onions

    In a skillet, sauté the sliced onions until they are soft and caramelized. Set aside.

    Warm the Tortillas

    Warm the flour tortillas on a skillet or in the microwave until soft and pliable.

    Assemble the Tacos

    On each tortilla, layer the grilled meat, sautéed onions, pico de gallo, chopped cilantro, Monterey and Cheddar cheese, and crumbled bacon.

    Add Cotija Cheese

    Lightly sprinkle the assembled tacos with Cotija cheese.

    Prepare the Side Dishes

    Cook the Spanish rice and grill the mixed vegetables until tender. Serve alongside the tacos.

    Top the tacos with sour cream and serve with lime wedges on the side.
