    Sear the Brisket

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the brisket cubes with salt and pepper, then add them to the pot. Sear the brisket on all sides until browned, about 5-7 minutes.

    Saute Vegetables

    Remove the brisket from the pot and set aside. In the same pot, add the chopped onion and bell peppers. Sauté until the vegetables are softened, about 5 minutes. Add the minced garlic and cook for an additional minute.

    Combine Ingredients

    Return the brisket to the pot. Add the diced tomatoes, kidney beans, black beans, beef broth, chili powder, cumin, smoked paprika, bay leaves, and additional salt and pepper to taste. Stir well to combine.

    Simmer the Chili

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 2-3 hours, or until the brisket is tender. Stir occasionally.

    Serve

    Once the brisket is tender, remove the bay leaves. Serve the chili hot, garnished with chopped fresh cilantro.
