    Trim and Rest

    If the brisket has large thick fat cap sections, trim excess fat leaving about 1/4 inch for flavor and moisture. Pat the meat dry with paper towels. Let sit at room temperature while you prepare the rub (about 20–30 minutes).

    Make Rub

    In a small bowl combine kosher salt, black pepper, paprika, brown sugar, garlic powder, onion powder, and optional cayenne. Mix thoroughly so the sugar and spices are evenly distributed.

    Apply Rub

    Generously coat the entire surface of the brisket with the rub, pressing it into the meat so it adheres. Make sure edges and any exposed seam areas are covered.

Smoke / Oven Braise

    Prepare Smoker or Oven

    Preheat smoker to 225°F (107°C). If using an oven, preheat to 300°F (150°C). If smoking, use a mild hardwood like oak, hickory, or pecan and ensure a steady low temperature. Place a drip pan under the grate if available.

    Add Liquid

    In a small bowl combine beef broth (or water), apple cider vinegar, and Worcestershire sauce. This will keep the brisket moist during the long cook.

    Smoke or Braise the Brisket

    Place the rubbed brisket fat-side up on the smoker grate or in a deep roasting pan if using the oven. If smoking, place a drip pan with the prepared liquid beneath the brisket. Cook until the internal temperature reaches about 195–203°F (90–95°C). At 225°F smoking this typically takes 1.5–2 hours per pound; for a 1 lb piece plan on ~2–3 hours depending on thickness. If oven-braising, cover tightly with foil and roast at 300°F, basting with the pan liquid every 45 minutes, until it reaches 195–203°F.

    Texas Crutch (optional)

    If the brisket stalls or you want to speed tenderization, once the internal temp hits ~160–165°F wrap the brisket tightly in foil with a couple tablespoons of the cooking liquid. Return to the smoker/oven and continue until 195–203°F.

Resting and Chopping

    Rest

    Remove the brisket from heat and let it rest, wrapped, for at least 30 minutes (up to 1 hour). Resting lets the juices redistribute for moist chopped brisket.

    Chop

    Unwrap and place the brisket on a cutting board. Using a sharp chef's knife, trim any remaining large fat pieces if desired. Chop the brisket into small, uniform pieces about 1/4–1/2 inch in size. For very tender brisket you can pull apart with forks, then roughly chop to desired texture.

    Moisten and Finish

    If the chopped brisket seems dry, stir in up to 1/4 cup of the reserved cooking liquid or warm beef broth and the optional tablespoon of butter to add sheen and richness. For saucier chopped brisket, fold in up to 1/2 cup barbecue sauce and heat gently until warmed through (about 3–5 minutes) so flavors meld.

Serve

    Taste and adjust seasoning with a pinch of salt or a few turns of black pepper. Sprinkle chopped fresh parsley if desired. Serve the chopped brisket hot on sandwiches, over rice, in tacos, or with classic sides like coleslaw and pickles. Leftovers keep well refrigerated for up to 4 days.
