Bologna Preparation

Slice and season
If your bologna is one continuous piece, cut it into 8 (about 1/8 lb each) thick slices suitable for sandwiches. Lightly pat slices dry with a paper towel. Sprinkle both sides of each slice with a small pinch of black pepper (use total of about 1/4 tsp).

Pan-fry bologna
Heat a large skillet over medium heat. Add 1 tablespoon vegetable oil and swirl to coat. When the oil shimmers, add 4 bologna slices in a single layer without overlapping. Cook 2–3 minutes until edges brown and the slice curls slightly, then flip and cook another 1–2 minutes. Reduce heat if browning too quickly. Repeat with remaining slices. Remove cooked bologna to a plate and keep warm.
Assembling Sandwiches

Prepare bread
Spread about 2 tablespoons mayonnaise across two slices of bread (1 tbs each) and spread 1 teaspoon mustard across the other two slices (or distribute to taste). On the mayo slices, place a lettuce leaf and tomato slices if using.

Add cheese and bologna
Place one slice of American cheese on each mustard-spread slice of bread. Arrange two hot bologna slices on top of the cheese for each sandwich (use four bologna slices per sandwich to equal about 1/2 lb total divided). Top with pickle slices.

Finish and press
Close sandwiches with the mayo-spread slices. Lightly butter the outside of both bread slices (about 1/2 tbs per outside) if you want a grilled finish.

Serve
Cut each sandwich in half if desired and serve immediately with potato chips or your chosen side.
