Method

Prepare bologna

    Slice and score

    If not pre-sliced, slice the 1/4 lb piece of bologna into 1/4-inch thick round slices (you will use 1–2 slices depending on thickness). Lightly score the surface of the bologna in a crisscross pattern with a knife to help browning and prevent curling.

    Heat pan

    Heat a nonstick or cast-iron skillet over medium heat. Add 1 teaspoon oil and allow it to shimmer but not smoke (about 30–45 seconds).

    Pan-fry bologna

    Add the bologna slices in a single layer. Cook 2–3 minutes on the first side until browned and caramelized at the edges. Flip and cook another 1–2 minutes. If using thicker slices, cook an additional 30–60 seconds per side. Season lightly with 1/2 teaspoon black pepper while cooking.

Toast bread & assemble

    Toast bread

    Spread 1 teaspoon softened butter on one face of each bread slice. Toast the bread in a separate dry skillet on medium heat or in a toaster until golden and crisp, buttered side down if using skillet (about 1–2 minutes per side in skillet).

    Spread condiments

    On the non-toasted face of one slice, spread 1 tablespoon mustard and 1 teaspoon mayonnaise. On the other slice (toasted side or inner face), place the American cheese slice so it will warm from the hot bologna.

    Assemble sandwich

    Place the hot pan-fried bologna on top of the cheese. Add dill pickle slices and the remaining 1/2 teaspoon black pepper distributed over the pickles. Add optional lettuce and tomato if using. If you like heat, add 1 teaspoon hot sauce. Top with the remaining slice of bread, toasted side out.

    Finish

    Press the sandwich gently for 10–15 seconds so the cheese softens and the components meld. Slice in half if desired and serve immediately while warm.

Serving & notes

    Serve the sandwich with chips, fries, or a pickle spear. To make a fried bologna melt, grill the assembled sandwich in the skillet for 1–2 minutes per side with a bit of butter until the bread is crisp and cheese fully melted.
