    Prepare the Base

    In a large pot, heat the olive oil over medium heat. Once hot, add the andouille sausage and cook until browned, about 5-7 minutes.

    Sauté the Vegetables

    Add the chopped onion, celery, green bell pepper, and minced garlic to the pot. Sauté for another 5 minutes until the vegetables are soft.

    Add the Turtle Meat

    Stir in the turtle meat and cook for an additional 10 minutes, allowing it to brown slightly.

    Incorporate Tomatoes and Broth

    Add the canned diced tomatoes, chicken broth, bay leaves, thyme, cayenne pepper, salt, and black pepper. Stir well to combine.

    Simmer the Gumbo

    Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for 1 hour, stirring occasionally.

    Finish with Sherry

    After 1 hour, stir in the aged sherry and allow it to simmer uncovered for an additional 15 minutes.

    Serve

    Remove bay leaves and ladle the gumbo over cooked rice in bowls. Garnish with chopped green onions before serving.
