Prepare the crust
Preheat the oven to 350°F (175°C). In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined.

Bake the crust
Press the mixture firmly into the bottom of a 9-inch springform pan. Bake in the preheated oven for 8-10 minutes until lightly golden. Remove and allow to cool while preparing the filling.

In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add sour cream and granulated sugar, mixing until fully combined.

Add the vanilla extract and eggs, one at a time, mixing well after each addition. Ensure no lumps remain.

Pour the cheesecake filling over the cooled crust in the springform pan, spreading evenly.

Bake in the oven at 325°F (160°C) for about 50-60 minutes, or until the edges are set but the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
