    Prepare the Steak

    Remove the porterhouse steak from the refrigerator and let it sit at room temperature for about 30-60 minutes before cooking. This helps in even cooking.

    Season the Steak

    Generously season both sides of the steak with kosher salt and freshly ground black pepper. Make sure to coat the edges as well. Allow the steak to rest for about 15-20 minutes to absorb the seasoning.

    Preheat the Grill or Pan

    If using a grill, preheat it to high heat. If using a skillet, preferably cast iron, heat it over medium-high heat until it’s very hot.

    Sear the Steak

    Add olive oil to the skillet or grill. Once hot, place the porterhouse steak on the grill or in the skillet. Sear for about 4-5 minutes without moving it to develop a crust.

    Add Aromatics

    After 4-5 minutes, flip the steak using tongs. Add crushed garlic cloves, fresh rosemary, and butter to the skillet or right next to the steak on the grill.

    Baste the Steak

    As the steak cooks on the second side for another 4-5 minutes, use a spoon to baste it with the melted butter and juices for added flavor.

    Check for Doneness

    Continue to cook the steak until it reaches your desired doneness. Use a meat thermometer: 130°F for medium-rare, 140°F for medium.

    Rest the Steak

    Once cooked to your liking, remove the steak from the heat and let it rest on a cutting board for at least 10 minutes. This allows the juices to redistribute.

    After resting, slice the steak against the grain and serve it with your favorite sides.
