    Rub the filet mignon with olive oil, then generously season both sides with salt and black pepper. Make sure to press the seasoning into the meat.

    Heat a heavy skillet or cast-iron pan over medium-high heat until it’s hot, about 5 minutes. You can test the heat by adding a drop of water; it should sizzle and evaporate immediately.
