Prepare the Dried Fruit
Place the dried apricots in a bowl and cover with 250ml of water. Allow them to soak for at least 1 hour or until they are soft.

Add Wine and Spices
Once the sugar is dissolved, add 375ml of white wine, the juice of 2 tablespoons of lemon, the split vanilla pod, and the cinnamon stick. Stir to combine.

Simmer the Mixture
Bring the mixture to a gentle simmer. Reduce the heat to low and let it simmer for about 20 minutes, or until the sauce thickens slightly.

Strain the Mixture
Once thickened, remove from heat. Strain the mixture through a fine sieve into a clean container, pressing the apricots to extract as much liquid as possible.

Let the drappier cool to room temperature. Transfer to a bottle and store in the refrigerator for up to 2 weeks.
