Prepare the Shrimp
In a large pot, bring water to a boil. Add the shrimp and cook for about 2-3 minutes or until they turn pink and opaque. Be careful not to overcook them.

Chill the Shrimp
Once cooked, immediately transfer the shrimp to an ice bath (a bowl of cold water with ice) to stop the cooking process. Let them chill for about 5 minutes, then drain and pat dry.

Prepare the Lettuce Cups
While the shrimp are chilling, carefully wash and dry the lettuce leaves. Set them aside on a serving platter.

Prepare the Cucumber
Using a mandoline or a knife, thinly slice the English cucumber. For a compressed effect, you can lightly press the slices with a weight or roll them in a clean towel.

Make the Dipping Sauce
In a bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, grated ginger, minced garlic, and red chili flakes until well combined. Adjust seasoning to taste.
