Harvesting Grapes
Select ripe Pinot Noir, Chardonnay, and Pinot Meunier grapes from the vineyard.

Pressing
Carefully press the harvested grapes to extract the juice. The pressing should be gentle to avoid extracting bitter tannins.

Fermentation
In a fermentation tank, combine the extracted juice with yeast. Allow the mixture to ferment at controlled temperatures for 2-4 weeks.

Blending
After fermentation, blend the different grape varieties in proportions of 50% Pinot Noir, 30% Chardonnay, and 20% Pinot Meunier.

Secondary Fermentation
Add sugar and a small amount of sulfur dioxide to the blended wine. Bottle it and seal it with a temporary cap to allow secondary fermentation to occur.

Aging
Store the bottles in a cool, dark place for at least 18 months to allow the wine to mature and develop its flavors.

Disgorgement
Remove the temporary caps and disgorge the sediment that has accumulated during aging.

Seal the bottles with corks and label them. The wine is now ready for distribution.
