Preparation

Mashing

In a large mash tun, heat 5 gallons of water to 165°F (74°C). Add the pale malt, wheat malt, and flaked oats, stirring to combine. Allow the mixture to rest for 60 minutes at 152°F (67°C).

Lautering

After mashing, sparge the grains with hot water to collect the wort. Aim for about 6 gallons of wort.

Boiling

Bring the wort to a boil and add the noble hops. Boil for 60 minutes, adding coriander and orange peel in the last 5 minutes.

Fermentation

Cooling and Pitching Yeast

After boiling, cool the wort quickly to about 70°F (21°C). Transfer to a fermentation vessel and pitch the Belgian yeast.

Fermentation Process

Seal the fermentation vessel and allow it to ferment at around 68°F (20°C) for about 2 weeks.

Bottling

Bottling and Carbonation

After fermentation is complete, siphon the beer into bottles, adding priming sugar for carbonation. Cap the bottles and let them condition for another 2 weeks.
