Preparation

Marinate the Chicken Wings

In a large bowl, combine the chicken wings, garlic powder, salt, and black pepper. Mix well to coat the wings evenly. Cover and let them marinate in the refrigerator for at least 30 minutes.

Prepare the Shrimp Salt

In a blender, combine dried shrimp, salt, black pepper, and garlic powder. Blend until the mixture is fine. Set aside.

Make the Sweet Nuoc Mam Sauce

In a saucepan over medium heat, combine fish sauce, sugar, and water. Stir until the sugar dissolves. Remove from heat and stir in lime juice and chili flakes. Set aside.

Fry the Chicken Wings

Heat the vegetable oil in a deep fryer or large pot over medium-high heat. Once the oil is hot, carefully add the marinated chicken wings in batches. Fry until they are golden brown and crispy, about 8-10 minutes. Remove and drain on paper towels.

Serve

Serve the fried chicken wings hot, sprinkled with shrimp salt or with the sweet nuoc mam sauce on the side for dipping.
