Preparation

For Pork Spring Rolls

In a bowl, combine ground pork, grated carrot, grated taro, and fish sauce. Mix well until all ingredients are incorporated.

For Tofu Spring Rolls

In a separate bowl, combine crumbled marinated tofu, grated carrot, grated taro, and house soy sauce. Mix well until all ingredients are incorporated.

Wrapping the Rolls

Soak the rice paper wrappers in warm water for about 10-15 seconds until soft. Lay the wrapper flat on a clean surface and place about 2 tablespoons of the filling (pork or tofu mixture) in the center. Fold the sides over the filling and roll tightly from the bottom up to form a spring roll.

Frying the Spring Rolls

Heat vegetable oil in a deep pan over medium heat. Once hot, carefully add the spring rolls in batches, frying until golden brown and crispy, about 4-5 minutes. Remove from oil and drain on paper towels.
