Preheat the Oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

Cream Butter and Sugar
In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.

Add Eggs and Vanilla
Beat in the eggs one at a time, then stir in the vanilla extract.

Mix Dry Ingredients
In a separate bowl, whisk together the all-purpose flour, baking powder, cinnamon, nutmeg, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

Scoop the Dough
Drop rounded tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers should remain soft.
