1. Sear the Oxtails

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the oxtails and sear them on all sides until browned. Remove the oxtails and set aside.

Stir in the tomato paste and cook for an additional 2 minutes, allowing the paste to caramelize slightly.

4. Add Oxtails and Broth

Return the seared oxtails to the pot. Pour in the beef broth, ensuring the oxtails are submerged. Add the bay leaves, thyme, salt, and black pepper.

5. Simmer

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 2.5 to 3 hours, or until the oxtails are tender and falling off the bone.

6. Serve

Remove the bay leaves before serving. Serve the oxtails with the rich broth and vegetables over rice or mashed potatoes.
