Prepare the Sweet Potato
Boil the sweet potato until tender, then mash it until smooth. Allow it to cool.

Activate the Yeast
In a small bowl, combine warm water, brown sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Make the Dough
In a large mixing bowl, combine the mashed sweet potato, activated yeast mixture, flour, cinnamon, and salt. Mix until a soft dough forms.

Knead and Rise
Knead the dough on a floured surface until smooth. Place it in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Picarones
Once risen, punch down the dough and shape it into rings (like donuts) with a hole in the middle.

Fry the Picarones
Heat oil in a deep frying pan to 350°F (175°C). Fry the picarones until golden brown on both sides, about 3-4 minutes each.

Drain and Serve
Remove the picarones from the oil and drain on paper towels. Serve hot with citrus and clove honey.
