Prepare the Ingredients
Slice the skirt steak into thin strips, chop the red onion, and mince the garlic. Halve the cherry tomatoes.

Cook the Steak
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the skirt steak and season with salt and pepper. Cook for 3-4 minutes until browned, then remove from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and chopped onion, sauté for about 2 minutes until the onion is translucent. Add the cherry tomatoes and cook for an additional 2 minutes.

Combine and Finish
Return the skirt steak to the skillet, add soy sauce and red wine vinegar. Stir everything together and cook for another 2 minutes. Adjust seasoning with salt and pepper if needed.

Serve
Serve the lomo saltado over a bed of French fries and garnish with fresh cilantro.
